Poulet Bonne Femme have just opened a new premises in Dundrum, Ireland and to celebrate i've asked them to share their famous recipe for Classic Caesar Salad straight from the kitchen of owners Gavin McCarthy and Sara Mitchell
Poulet Bonne Femme Classic Caesar Salad Recipe
1.5 Garlic Cloves
2 Tablespoons of Parmesan Cheese 1 Teaspoon of Dijon Mustard
1 Tablespoon of Lemon Juice
Salt and Pepper (to taste)
Baby Gem Lettuce
Baby Red Radishes (sliced thinly) Parmesan Shavings
Meat: Poulet Bonne Femme Free Range Irish Chicken
Poulet Bonne Femme Honey Roast Ham
1. Peel and chop garlic cloves and pound into a paste. Add the mayonnaise, lemon juice, Parmesan and Dijon Mustard and stir well to make a pourable dressing. Add Salt and Pepper to suit taste.
2. Separate the gem lettuce leaves and wash and drain them well. Tear any large leaves into smaller pieces.
3. Slice the baby red radishes thinly and arrange the lettuce and sliced radishes in a large serving dish.
4. Cut the cooked chicken and honey roast ham into strips and scatter these over the lettuce and radishes and toss everything together lightly. Spoon over half the dressing, lightly sprinkle the parmesan shavings and serve.
